I'm trying to find out which service grip is easier to do a topspin 2nd serve.

I'd recommend Continental, especially if that's the same grip you use for your first serve. Possible to hit flat, slice, and topspin/kick serves with this grip.

I use a backhand grip for all those serves, but that's more that a lot of players are comfortable with.

Unless you have Milos Raonic's arm, Continental. If you DO HAVE RAONIC'S arm, go for an eastern backhand, with the butt of the racket inside your palm (the wrist will be more flexible, but you need to be very strong or you lose consistency).
